The smooth skin of papaya turns from green to yellow or pale orange when ripe. The surface of this unique looking fruit is usually slightly speckled with green. The thick layer of melon-like flesh under the skin is pinkish green and the central cavity is filled with seeds. Most the world prefers the yellow variety, but in Mexico, Central, and South American regions the red papaya is grown and harvested year round. |

and will meet our written specifications. Puree concentrates and juice concentrates can be manufactured to a different Brix if specified in advance by customer. |
