The smooth skin of papaya turns from green to yellow or pale orange when ripe. The surface of this unique looking fruit is usually slightly speckled with green. The thick layer of melon-like flesh under the skin is pinkish green and the central cavity is filled with seeds.
Most the world prefers the yellow variety, but in Mexico, Central, and South American regions the red papaya is grown and harvested year round.
